Delicious Danish Banana Bread

This is a recipe that my Mom started baking when I was really young. As I grew older, and my interest in baking grew, I began to be the one who would do most of the baking. This is a fairly simple and scrumptious recipe that can be made all times of the year!!



I start off by preheating the oven to 350°F. Then put 1 cup of oil, 1 cup of white sugar, and 1 cup of brown sugar into the mixing bowl.



Once it’s mixed, it should look something like this; super grainy but wet.



Next, add 2 eggs and mix those in. In all of the years that this recipe has been made in my house, we’ve come to realize that 4 bananas amounts to the 2 cups of mashed bananas that you need, so you can save yourself the extra dishes of putting mashed bananas into a measuring cup and just trust me that 4 bananas is how much you need!!



I usually like to mash and mix in 1 banana at a time just to ensure that it is as smooth as it can be with limited banana chunks in it.



In a separate small bowl, put in the 2 tsp. of baking soda and add the 2 tbsp. of hot water. Mix these two together until the baking soda is partially dissolved in the water. Then mix it in with the main batter. It will be super liquidy at this point, but will start turning into the colour that it should be.



For the flour, I prefer to put in 1 cup at a time and pour it in very slowly, allowing each little bit to mix in before adding more. This is just to avoid the massive flour cloud that is very likely to happen if you put all of the flour in at once!! I also use a spatula to scrape off the sides so no flour gets stuck on the edges and all of it gets mixed in!!



Next is 1 tsp. of salt, and ½ tsp. of vanilla!! (Side note: does anyone else not like the smell of vanilla? It seems to be a smell that a lot of people are obsessed with, my friends used to literally take a bottle of vanilla and just sniff it, but personally I’m not a huge fan.)




This is the end of the basic recipe for the banana bread. But you can feel free to add any extra ingredient that you wish to make it a little more tasty!! For example, my family loves adding chocolate chips, but you can also put nuts, or whatever your little heart desires!! How much you put in is completely preference, I generally put in anywhere between 1 ½ cups to 2 cups of chocolate chips (approximately, because I just kind of pour them in out of the bag until it looks like a good amount!!)



I prefer to fold the chocolate chips in with a spatula but feel free to use your mixer to slowly mix your added ingredient to the batter!!



This recipe size makes 2 loaves, so you want to spray 2 bread pans so that the loaf won’t stick to the sides or bottom (I just use Pam). The measurements of these pans are approximately 5 ½ inches by 9 ½ inches, but you can use whatever you have!! Just remember to alter the baking time depending on your size of pans!!



Try to pour the batter into both pans as evenly as you can (this will ensure equal baking time for each)!!



Pop them in the oven and bake!! The recipe calls for 45 minutes, but I usually have them in there for 50 minutes. It really depends on your pans and oven, so the best way to make sure you bake them properly is to start off with 45 minutes, then use a toothpick and stick it in the loaves. If it comes out dry; perfect, they’re done!! If the toothpick comes out with batter on it, stick the loaves back in the oven for about 5 minutes and then check again!!



Once out of the oven, let the loaves cool down for a few minutes in the pans, then transfer them onto a cooling rack.




Then you’re done!! Enjoy them warm or cool!! Have a slice by itself or spread on some butter for a little extra taste!!

o 1 cup oil

o 2 cups sugar (1 white and 1 brown)

o 2 eggs

o 2 cups mashed bananas

o 2 tsp. baking soda in 2 tbsp. hot water

o 3 cups flour

o 1 tsp. salt

o ½ tsp. vanilla

Mix in order given. Bake at 350°F in 2 bread pans for about 45 minutes.
